Tasting notes: Whisky, blood orange, cinnamon, sour cherry, red wine, blackcurrant. 

Cherries are picked when fully ripe and hand sorted to remove any underripes, over ripes or tree dried cherries.

The selection is then placed in barrels at the nearby wet mill in Garzon.

Cherries are fermented for 80 hours before being dried on raised beds or small patios depending on the space available and weather.

The mountainous characteristics of Huila together with the climate are influenced by the Magdalena River and the two mountain ranges of the Andes, within which are several snow-capped volcanoes that provide the soil with mineral richness.
