A first for us at Yellow Bourbon: A honey process Yirgacheffe. Famed for their delicate, elegant washed coffees and their bold, ripe, intense natural coffees, the processing mills of this famed region have in recent years turned their hand to honey processing their coffee, where the cherry is mechanically pulped and the sticky mucelage is allowed to sun dry before being fermented. In the cup we get the big ripe blueberry notes of a natural but the finish tapers to a juicy, bright citrus, more reminiscent of a washed coffee. A real experience, incredibly aromatic and sweet.
